Breakfast is always tricky for me on the keto diet. Time is of the essence, and I don’t want to be tempted by whatever delicious carb-filled option my kids are eating! Eggs are one of the most common keto breakfast meals, but sometimes I don’t feel like standing at the stove making scrambled eggs for the fifth time this week. A super fast solution is making a batch of Ham, Egg & Cheese cups and having them in the fridge or freezer to grab and go!
I love these egg cups! Make them ahead of time and don’t have to think about making breakfast for several days. This is a perfect solution for a quick keto breakfast on the go that is so delicious, they probably won’t last as long as you hope they will!
Quick Keto Breakfast On the Go
Ham, Egg, & Cheese Cups
Ingredients
- 1 dozen eggs
- 24 pieces thinly sliced ham
- 3/4 cup cheddar cheese, shredded
- salt and pepper to taste
Directions
- Spray or grease a 12 count muffin tin.
- Put two pieces of thinly sliced ham in the bottom of each cup, making a muffin liner out of it.
- Sprinkle about a tablespoon of shredded cheese into each cup.
- Crack one egg into each muffin cup. You can also scramble the eggs first if you prefer.
- Season each cup with salt and pepper.
- Bake at 400 degrees for 12-15 minutes for runny eggs or 20-25 minutes for firm.

You could also change up the type of cheese you use—pepper jack would be delicious!
