Welcome to the start of Blueberry season! Fresh fruit instantly makes me want to make cobbler. After a few years of playing around I feel like we’ve finally found the best gluten free cobbler recipe!
This Friday Whole Foods will have $1.99/pint organic blueberries. The sale is for 5/31 only. In honor of that great sale I thought I’d share our blueberry cobbler recipe (or any fruit really).
Gluten Free Blueberry Cobbler Recipe
1 cup Pamela’s Classic Vanilla Cake Mix
3/4 cup sugar
3/4 cup milk
3-4 cups of blueberries (or fresh/frozen fruit)
2 tsp baking powder
1 stick of butter
Directions:
- Melt butter, pour into 8×8 or 9×9 baking dish.
- In separate bowl combine dry ingredients.
- Add milk to dry ingredients and blend.
- Pour batter into melted butter, do not mix.
- Drop fruit on top.
- Bake at 350 for 50 minutes.
If you want it to have a crumbly top then 3/4 through baking put some dry Pamela’s mix on top, just sprinkle it around. Also if you only have frozen fruit, that’s fine just drop it right on top frozen and put it in the oven, it will come out perfect with no need to thaw anything before baking.

Looking for an inexpensive Father’s Day gift? Right now you can print out a coupon for a FREE Target 8×10 Portrait! This coupon will get you a free sitting as well as a free traditional 8×10 portrait at a Target Portrait Studio. You’ll want to check to see where the nearest Target Portrait Studio, since not every Target has one.
This coupon would be a great gift for Father’s Day that wouldn’t cost a lot (all you need is a frame for the portrait to go in).
The expiration date on the coupon is 6/22, so it could still count as a late Father’s Day gift.

I’m really excited about this week’s podcast episode over at The Frugal House! It’s all about living off the land. One of the best ways to save on produce is to grow it yourself, so we’re going to talk about that. Our family recently started raising chickens and growing a garden, but I learned so much just from this podcast.
You don’t have to live on a ton of land to have chickens and/or grow a garden. This week I talked to Angela England author of Backyard Farming on an Acre (More or Less). Angela raises goats, chicken and grows a garden that provides 40% of their produce all on 1/4 acre! She has a lot of great advice about how to get started growing your own food without being overwhelmed. City folks don’t have an excuse, she proves that you can do this too.
I also talked to Tony Melton from the SC Clemson Extension. Extension programs across the country are here to help all of us looking for more information about agriculture – and they definitely have the answers.
To learn more about Backyard Farming, go ahead and download this week’s episode and listen to it when you get the chance.
There is a new Food Lion coupon for $4 off a $20 purchase available! You will load the coupon to your MVP card. This is a great way to save on top of sales and coupons!
Last week there was a $2/2 E-Coupon that didn’t come off for everyone. This coupon may also not come off for everyone, but it did let me load it to my card. I haven’t had a chance to go to the store to test it though.
Note: The E-Coupon doesn’t say anywhere that this is a local offer. If the coupon doesn’t come, mention it to customer service and hopefully they will make it right.
Thanks, Monk!
