With the growing awareness of gluten-free diets, the odds are likely that you probably know someone who can’t eat gluten or is dipping his or her feet in the water of the diet to test it out. And if not, you’ve more than likely been spotting more and more gluten-free products in the shelves of grocery stores. While not everyone who practices a gluten-free lifestyle has an allergy, the truth is that lots of people do.
It’s estimated that Celiac disease affects one in every 100 Americans (with most of those cases being undiagnosed). So, what is Celiac disease, you ask? It’s basically a condition where, when gluten (a protein found in wheat, barley, and rye) is consumed, the body damages part of the small intestine and prevents a person from absorbing nutrients. It can lead to lots of short and long-term health problems.
It sounds grim, but luckily it can be contained with a gluten-free diet. While it does mean that some sacrifices will be made, most everything can be created in a way that’s gluten-free by either substituting ingredients or steering clear of it and getting creative with your meal choices. A gluten-free diet can still be delicious! And since May is Celiac Disease Awareness Month, I thought it would be fun to shed some light and share some yummy gluten-free recipes.
