I’m not vegan, but I know many people who are or who for whatever reason avoid gluten or dairy. As a result, I love experimenting and trying to figure out how to make snacks that they can eat. These peanut butter bites are vegan as well as gluten and dairy free, and they turned out so delicious that I am now making them for a regular snack for me and my family. They are not completely allergy friendly, of course, since they contain peanut butter. But you could easily swap that out for a different nut butter or for something like sunflower seed butter if you have to avoid nuts altogether.
Vegan Peanut Butter Bites Recipe
You only need five ingredients for this recipe: maple syrup (or another liquid sweetener), oat flour, garbanzo beans, peanut butter, and almond milk (or any milk, depending on your diet!).
I like to use natural, no-sugar added peanut butter whenever possible because it lets me control the amount of sweetness better. However, if you only have peanut butter that includes sugar, I’d just recommend tasting the mixture before adding maple syrup so they don’t turn out sweeter than you’d like.
You want to make sure you completely drain and rinse the chickpeas first.
Then add them to a food processor or blender.
Then add in the maple syrup, peanut butter, and almond milk.
