Ingredients

• 2 tbsp olive oil
• 1/2 cup diced onion
• 1/2 cup chopped spinach
• 1/2 block cream cheese, room temperature
• 1 cup shredded cheese (whichever kind you prefer)
• salt and pepper
• 3-4 chicken breasts

Directions

1. In an oven-safe skillet over medium heat, add the olive oil.
2. Add the diced onion and chopped spinach and cook until softened, about 5 minutes. Remove from the pan and set aside until slightly cooled.
3. In a bowl, mix together the cream cheese, shredded cheese, salt and pepper, and reserved veggies. Mix until well combined.
4. Butterfly each chicken breast and sprinkle the outside with salt and pepper. Spread the cream cheese mixture over the inside of the chicken breasts and use toothpicks to hold together.
5. Preheat the oven to 400 degrees.
6. In the same skillet over medium heat on the stove (add more oil if needed), sear the chicken breasts on all sides until golden.
7. Bake the chicken in the oven until cooked through (internal temperature should be 165 degrees), about 15 minutes.
8. Remove the toothpicks and serve.
