This sausage and potato breakfast casserole is so good and is great for a crowd! It’s filled with tender potatoes, cheese, diced peppers, and ground sausage.
This is great for breakfast, but I also like to make it and use the leftovers for lunches that week! Plus, use whatever veggies you have on hand to make it your taste.
Tip: This can be made ahead! Prepare the entire casserole, cover it, and place in the refrigerator for up to 24 hours. Before baking, remove from the refrigerator and let sit for 30 minutes at room temperature.
Ingredients
- 1 lb ground sausage (mild or spicy)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 cup diced onion
- salt and pepper
- 2-3 russet potatoes, peeled and diced into cubes (about 2 cups)
- 6 eggs
- 2 cups shredded cheese (whichever kind you like)
- 2 tsp hot sauce
- 1/4 cup milk
- 1 tsp garlic powder
Directions
- Preheat the oven to 350 degrees. Grease a 13x9 casserole dish and set aside.
- In a large skillet, brown the sausage and break up into small pieces as you cook. When it's fully cooked, remove the sausage from the pan and set aside.
- Add the diced bell peppers and onion to the skillet (season with salt and pepper) and cook until softened, about 5-7 minutes.
- While the peppers are cooking, add the diced potatoes to a large microwave-safe bowl and add 1/2 cup water. Microwave for 4 minutes until slightly tender. Drain the remaining water from the potatoes.
- Add the diced potatoes to the skillet with the peppers and continue to cook until the potatoes get a bit softer, about 5 minutes.
- Add the potatoes, peppers, and sausage to the prepared casserole dish and set aside.
- In a mixing bowl, mix together the eggs, 1 cup of the shredded cheese, hot sauce, milk, garlic powder, and a few sprinkles of salt and pepper. Pour evenly over the potato mixture in the casserole dish and gently stir to combine.
- Top the mixture with the rest of the shredded cheese and bake for 35-40 minutes until the eggs are firm.
