For years, I loved the idea of cheesecake (and loved to eat it), but the idea of making one intimidated me. Then I was given a springform pan as a gift, and I decided I had to try and see how it went. To my surprise, cheesecakes are not the scary thing I thought they were! At the beginning, I made the basic cheesecake. But once I felt like I had the hang of it, I started branching out. Since then, I’ve made so many different kinds, it’s hard to pick my favorite.
