Black Bean Sweet Potato Enchiladas
These are full of flavor and could be frozen either before or after baking them, with or without the sauce.
Spinach and Ricotta Stuffed Shells
Flash freeze the shells with the stuffing and then just pull out as many as you need, add sauce, and bake for an easy dinner!
