These chicken and grain lettuce wraps are healthy, quick, and so delicious.
To make it super easy, this recipe uses those 90-second microwavable whole grain pouches you can buy in the rice section of your grocery store. Plus, use whatever veggies you prefer in the filling!
Ingredients
- big romaine lettuce leaves, washed and patted dry (you can also use butter lettuce)
- 1 yellow squash, diced
- 1/2 onion, diced
- 1/2 cup carrots, diced
- 1 tbsp butter
- 1 pound ground chicken
- pinch of salt and ground pepper
- 1/2 cup soy sauce
- 1 tbsp honey
- 90-second microwavable grain pouch (like quinoa, brown rice, spelt, etc.)
Directions
- In a skillet over medium to medium-high heat, add the butter and diced squash, onion, and carrots.
- Let the veggies cook for a few minutes until slightly soft (about 5 minutes) and add in the ground chicken. Season with a pinch of salt (not too much since the soy sauce will be pretty salty) and pepper. Crumble the chicken while it's cooking and cook until browned.
- Add in the soy sauce and honey and stir to combine. Reduce the heat and allow to simmer until reduced and thickened slightly.
- While the chicken mixture is reducing, cook the grain pouch in the microwave.
- To serve, add a spoonful of grains to the lettuce leaves and then a spoonful of the chicken mixture. Eat like a taco!

I don’t even remember what an empty laundry hamper looks like. The goal is to get to a point where you don’t feel overwhelmed. A huge way to help yourself get there is to set up your home so that there is less to do to begin with.
Ready to get started? Here are some tips.
15 Minutes A Day
You can do anything for 15 minutes. If your house is cluttered, it will take time to restore order. Give yourself grace in this and do a little each day. Before going to bed, set a timer for 15 minutes. For those 15 minutes you will work quickly and efficiently to declutter your house. You may not make it past the huge pile of shoes the first day: that’s okay! It’s important to just start.
Once the house is somewhat organized, you can use this 15 minutes to quickly pick up at the end of the day. This will help you to start out each morning with a neat and tidy home.
We have a smaller version of this with our kids. A few times a day we set a timer and do a 5 minute clean up. Everyone jumps in (parents too) and we’re always thrilled with how much we can do in 5 minutes!
Everything Needs A Home
When you do your budget, every dollar needs a name. When you clean your house, every item needs a home. This makes cleaning up quick and easy because you don’t have to think about where something should go. A huge added bonus is that you can quickly find things you can need them.
To start organizing, take it one room at a time. Avoid the temptation to go to the store and buy a bunch of baskets… They aren’t cheap and you’ll probably end up with the wrong shapes & sizes.
