So last week I never found time to type up our meal plan… it also meant that I never made one and that didn’t go so well.  We not only ended up eating out on run twice which I try to avoid, but we also fell off the diet wagon.  This week we are doing great of getting back into our routine and back into losing weight!  I’m currently down 37 lbs, so if you are wondering if Keto works, I vote yes.

Here’s our Keto meal plan this week (with additions of starch for the kids):

enchiladas

Keto Chicken Enchiladas 

I grabbed a big package of rotisserie chicken meat at Costco last week not realizing just how much meat it was.  We are stilling thinking up ways to use it, and this recipe is perfect.  For the kids I will make traditional enchiladas in tortillas but for ours we will either do them as Enchilada Bowls or Make “tortilas” out of melted cheese and roll them up.

To make cheese tortillas:

  1. Take parchment paper and cut it into two squares about 8×8 inches.
  2. Put a handful of cheese in the middle of each square.
  3. Bake at 350 for 6-7 minutes until the cheese has melted, is bubly and the edges have started to crisp.
  4. Put your chicken filling on the edge of the cheese tortilla and roll up.
  5. Top with sour cream and a small bit of enchilada sauce.

Lipton Onion Soup Burgers & Asparagus

This is a family favorite and the mix we use is only 4g of carbs per serving, so it still works!  Grab a pound ground beef and mix in a packet of lipton onion soup mix and 1 egg.  We also add Worcestershire sauce normally, but will leave that out this week to skip the carbs.  Make the meat into patties and cook them in a skillet.  They are quite simple but very yummy!

Steaks, Broccoli & Mashed Potatoes

The biggest reason I think my husband has stuck with Keto as long as he has, is that we can eat steaks once a week and it’s now “diet food”.  I generally season them with salt, pepper and garlic and then they are set for the grill.  We’ll also have roasted broccoli with cheese on top and I plan to make mashed potatoes for the girls.  (We get a bag of potatoes in our produce co-op basket every time and have a lot to eat up).

Chicken Kabobs with Spinach Salad

My go-to seasoning for chicken is Italian dressing.  It doesn’t matter how you are cooking chicken, it always makes it taste amazing.  So chop up the chicken into squares, marinate in Italian dressing and then put your skewers together.  We will also have a fresh spinach salad.

Cabbage Stir-fry with Steak

We’ve made this recipe a lot over the past few months, but this week we are going to change it up and use leftover steak as the meat.  We’ve done it once before and it was amazing, so this week we will plan ahead and cook an extra steak just to have enough to make a full batch.

This recipe makes so much that we usually eat on it for lunch for a few days during the week.

Chick-Fil-A Night

I know I said at the beginning that we try to avoid eating out, but sometimes it is the only option.  This week we are heading to the Operation Christmas Child Processing Center to work and as tradition we always stop for dinner at Chick-Fil-A on the way home (it’s about an hour and a half from our house).  The other tradition is to get a holiday milkshake, but we are going to try to hold each other accountable…
