Here’s a great meal idea that is low carb and super filling without compromising on taste! Try this Big Mac salad based on the popular burger from McDonald’s!
You can prep it in advance or could always add a crumbled up hamburger on top instead of cooking the ground beef like I did.
Low Carb Big Mac Salad
All you’ll need is ground beef, salad base (I used cabbage), seasonings, Thousand Island dressing, red onions, and your favorite pickles! If you are OK with adding dairy, you can also add cheese.
The first step is to brown your ground beef. I was making enough for 4-6 individual servings of salad, so I cooked up about 2 lb of ground beef.
You can use whatever seasoning you like, but I really love this Aldi brand steak seasoning for burgers, so I used it on the ground beef.
For my salad base, I love using coleslaw mix. It’s so filling and crunchy, and it comes in a bag all ready to eat without having to wash it! You could use any kind of lettuce for this salad, though. Shredded lettuce or Romaine would be delicious!
One key aspect of a Big Mac is the pickles. I saw these spicy pickles at Aldi so grabbed a jar, and they turned out to be delicious.
I chopped up the pickles and a red onion for my toppings.
Then just add your beef and the pickles and onions to your salad base and stir it up.
I used Thousand Island dressing on top to make it as close to a Big Mac as possible, but of course you can use any dressing that you think sounds good!
Ingredients
- 2 lb ground beef
- Steak seasoning (or other seasoning)
- 4-8 cups coleslaw mix (or other salad greens)
- Pickles, chopped
- Red onion, chopped
- Thousand Island dressing
Directions
- Brown the ground beef and drain the grease. Add the steak seasoning.
- Place the coleslaw mix in a bowl and top with ground beef. Then add the pickles and onions.
- Stir to combine and top with the thousand island dressing.
