Growing up, I never thought I liked carrots. As an adult, though, I realized that I had just never had carrots that were prepared well. These Instant Pot carrots may be able to convert any carrot haters in your house; my kids don’t all love them, but they all eat them without much complaint. They’re the perfect texture, and with the right spices, just the right mix of savory and a bit of sweetness.

I love using my Instant Pot to make side dishes. You can set it and forget it while you’re working on the main dish. I always grab a few bags of baby carrots at the store because they’re super cheap and they are so easy to make, if I don’t have time to make another veggie, we can always have these.

Instant Pot Carrots

All you need for this recipe are baby carrots, water, butter, and whatever spices you want to add. My favorite way to eat these carrots is with garlic and thyme, but even just salt and pepper is delicious.

The easiest way to make these Instant Pot carrots is with the Instant Pot colander, which is an additional item you have to buy, but is totally worth it. I use it for not only these carrots but also for hard boiled eggs. You can rinse the carrots in the colander before you cook them, and then strain out any excess water after they’re done cooking.

Once the carrots are rinsed, add about 1.5 cups of water.

Set the Instant Pot to cook at high pressure for 8 minutes. When the time is up, release the pressure manually.


Strain the water from the carrots and place the carrots in a bowl.


Add butter, garlic powder, thyme, salt, pepper, and any other additional spices. You can also make these Instant Pot carrots with regular sized carrots if you peel them and chop them into smaller pieces.

Instant Pot Carrots

Ingredients

  • 1 bag baby carrots
  • 1.5 cups water
  • 1 tbsp. butter
  • 1/4 tsp. garlic powder
  • 1/4 tsp. dried thyme
  • salt and pepper

Directions

  1. Rinse the baby carrots and place them in the Instant Pot colander insert.
  2. Add 1.5 cups of water.
  3. Set the Instant Pot to cook at high pressure for 8 minutes.
  4. When the time is up, release the pressure manually.
  5. Strain the water from the carrots and place in a bowl.
  6. Add butter, garlic powder, thyme, salt, pepper, and any other additional spices.
