No one is surprised that I love a good freezer recipe. There is nothing like just being able to pull something out of the freezer, stick it in the microwave and have it ready to eat in just a few minutes. One recent recipe I’ve tried is breakfast burritos. I want my kids to get a hearty breakfast in the morning, and while cereal and Pop-Tarts are easy, they don’t fill my kids up. These breakfast burritos are packed  with protein and can be heated up and wrapped in a paper towel to eat on the go, if necessary.

Freezer Breakfast Burritos

I made this recipe even easier by using a bag of frozen potatoes O’brien, which are the ones that come with peppers and onions. You could always add more peppers and onions if you want, but this made these so quick to make.

First I cooked the potatoes and the sausage in a skillet over medium heat until the sausage was browned and the potatoes were cooked through.

I didn’t end up having to drain any grease, but you may need to depending on the type of sausage you use.

Once the potatoes and sausage are all cooked, remove them from the heat.

While the potatoes and sausage are cooking, work on the eggs. I used a whole dozen.

Whisk them together and add whatever seasonings you want.

Then just barely scramble them in a skillet over low-medium heat.

Lay your tortillas on the counter and divide the sausage potato mixture between tehem.

Break up the eggs with a spatula.

Then add the eggs to the tortillas.

Roll them up, and you’re done! I wrapped each one with press ‘n seal and then put them in a freezer bag. When you’re ready to eat them, just heat for 90-120 seconds in the microwave!

Freezer Breakfast Burritos

Ingredients

  • 12 large tortillas
  • 12 eggs
  • 1 bag frozen potatoes O'brien
  • 1 lb breakfast sausage
  • salt, pepper, and other seasoning

Directions

  1. Put the frozen potatoes and sausage in a skillet and cook until the potatoes are heated through and the sausage is browned. Drain if necessary.
  2. Whisk the eggs with your seasonings and cook over low heat until just barely scrambled.
  3. Lay 12 tortillas out on the counter and divide the sausage potato mixture evenly on each tortilla.
  4. Now divide the scrambled eggs onto the tortillas.
  5. Wrap each tortilla into a burrito. Cover with plastic wrap or press 'n seal and place in freezer bag.
  6. To eat, wrap in a paper towel and cook for 1.5-2 minutes in the microwave.

Make a big batch of these freezer breakfast burritos and you'll have an easy option for the morning. They heat up in just a couple minutes in the microwave!
