I used a yellow cake mix, but you can also use a white cake mix. Plus, boxed cake mix is often on sale at lots of stores around town!

Eggnog Crinkle Cookies (Using Cake Mix!)

Ingredients

  • 1/3 cup unsalted butter, room temperature
  • 2 eggs, room temperature
  • 1/4 cup eggnog
  • 1 box cake mix (use yellow or white)
  • 1 tsp baking powder
  • 1/2 tsp grated nutmeg
  • 3/4 cup powdered sugar

Directions

  1. In the bowl of a stand mixer fitted with the paddle attachment, mix together the butter, eggs, and eggnog until smooth.
  2. Add the cake mix, baking powder, and nutmeg and stir until just combined.
  3. Cover and chill the dough for at least an hour so the dough will be easier to handle.
  4. Preheat the oven to 350 degrees.
  5. Scoop the dough into balls (about a heaping tablespoon each) and roll them in powdered sugar.
  6. Place them evenly spaced on a lined cookie sheet, use your hand to flatten the dough just slightly, and bake for 12-14 minutes, until just golden brown on the edges.
  7. Allow to cool and set before eating.
