Easy Breakfast Cookies Recipe

I’m always looking for easy recipes I can prep and keep in the freezer to make breakfast easier. I had some ripe bananas so decided to come up with a recipe for breakfast cookies based on some I’ve seen around. These have limited ingredients, mix up super fast, and taste great room temperature or even warmed up in the microwave. And even though they are called “cookies,” they provide lots of nutrition that make for a great breakfast. Pair with some yogurt or even some scrambled eggs for a filling breakfast.

Easy Breakfast Cookies Recipe

The main ingredients are oats, banana, peanut butter, and chocolate chips.

Add the oats and your other pantry ingredients into a bowl first.

Then add in the banana and peanut butter. Don’t use a spoon like I used here! use a fork.

I ended up using my hands to mix them together better.

You want to make sure the ingredients are evenly mixed so that they stick together well when you form the cookies.

I didn’t add the chocolate chips until later because one of my kids inexplicably doesn’t like chocolate chips.

You’ll bake these at 350 degrees for about 15 minutes. Once they are cooled, you can pop them in the freezer!

Easy Breakfast Cookies Recipe

Ingredients

  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1.5 ripe bananas, mashed
  • 1/2 cup nut butter
  • 1 tsp. vanilla
  • 1/4 cup mini chocolate chips

Directions

  1. Add the dry ingredients to the bowl.
  2. Add the bananas, vanilla, and peanut butter and use a fork to mash.
  3. Stir in the chocolate chips.
  4. If needed, use your hands to form it into a large ball so the ingredients are evenly mixed.
  5. Form into small balls, flatten, and place on parchment paper.
  6. Bake at 350 degrees for 15 minutes.

These breakfast cookies mix up in a flash and use ingredients you probably have on hand—oats, peanut butter, and bananas!
