The theme of the meals I’m cooking these days is simple. I don’t want it to require much prep or thought. I just want to go into the kitchen and quickly make something to feed my family. This recipe fits the bill.
My husband grew up on Hamburger Helper and loved it, so it was a high compliment the first time I made this easy beef stroganoff and he said it was even better than Hamburger Helper! This is truly one of the few meals that every single child in my household LOVES. There are many meals that people like and tolerate, but this is a meal I serve where everyone cleans their plates and asks for seconds.
This recipe is also keto and low-carb friendly if that’s what you’re doing right now. Just serve over something like zucchini noodles or cauliflower rice!
Easy Beef Stroganoff Recipe
The only ingredients you need for this recipe are butter, cream cheese, Worcestershire sauce, mushrooms, ground beef, and sour cream. Then just some salt and pepper! You probably have most of these items on hand already.
In a large skillet, brown the ground beef.
While it’s browning, chop or slice the mushrooms (or buy the mushrooms already sliced!). Once the meat is done, drain any excess grease, remove from the pan and set aside. Melt the butter in the same skillet and saute the mushrooms on medium heat until soft.
Drain excess liquid from the mushrooms, if any. I didn’t do it when I was last making this recipe and regretted it later when I had to let the stroganoff cook at high heat for a long time to evaporate some of the excess moisture.
Add the beef back to the vegetables. Add Worcestershire sauce and stir to combine.
Reduce heat to medium-low, then add the cream cheese and stir continually until it is thoroughly melted.
Stir in sour cream, then add salt and pepper to taste.
That’s it! It should now look like a pan of creamy, mushroomy goodness.
Serve over pasta or rice, or over cauliflower rice or zucchini noodles if you’re trying to stay low carb. We like to keep it easy and serve it over macaroni noodles (making it even more like Hamburger Helper!).
