Do your kids do the thing where they can’t get enough bananas, and then all of a sudden they don’t want bananas? Mine do, too, and when that happens, I end up making something with all the ripe bananas. A friend was going through a hard time last week, but she’s allergic to dairy, so I thought about some of the recipes I’ve made with bananas and decided to tweak my favorite banana bread recipe. This was super easy to make dairy free, and a bonus is that it’s also very low in sugar. This dairy free banana bread recipe makes two loaves—one for you and one for a friend!
Dairy Free Banana Bread
You’ll need some very ripe bananas. I used 7 large ones, but you can also use 8 smaller ones.
Mix up the bananas, eggs, and vanilla with your stand mixer.
Add in your oil/fat. I used 1/4 cup vegetable oil. You can also use coconut oil or applesauce as long as it’s not butter!
Now add in both kinds of sugar.
Add in the baking soda, baking powder, salt, and cinnamon.
Then slowly add the flour (or do it all at once!).
I didn’t have dairy free chocolate chips, so I put half the batter in one loaf pan and then added my regular chocolate chips to the other pan for my family to eat.
Bake for about 45 minutes. It comes out with a nice thin crisp crust on the outside but chewy and moist and delicious on the inside.
The chocolate chips take it over the top, in my opinion!
Ingredients
- 8 very ripe bananas, mashed
- 2 eggs
- 2 tbsp. vanilla extra
- 1/4 cup vegetable oil (or coconut oil)
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 3 cup flour
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- dairy free chocolate chips (optional)
Directions
- Preheat the oven to 350.
- Mix the bananas, eggs, vanilla and oil together in a mixer.
- Add the sugar and mix to combine.
- Add the flour and other dry ingredients.
- If using them, add the chocolate chips.
- Grease 2 loaf pans and divide the batter evenly between the two pans.
- Bake for 40-45 minutes or until a knife or toothpick inserted in the middle comes out clean.
