I’m always looking for easy homemade snack ideas and I also always need to seem to use up ripe bananas. Some weeks my kids can’t eat enough bananas; other weeks they just all go brown on the counter. I threw several in the freezer for smoothies, but we were low on snacks so I decided to try a new recipe. These chocolate peanut butter oatmeal cups have no added sugar other than what’s in the chocolate chips. They’re full of protein and fiber, and they taste great at room temperature or heated up a bit so the chocolate gets a bit melty.

Chocolate Peanut Butter Oatmeal Cups Recipe

These oatmeal cups are made with ingredients that you probably already have in your pantry. Here’s what you need: rolled oats, flour, cinnamon, baking powder, milk, ripe bananas, coconut oil, eggs, peanut butter, and miniature chocolate chips (optional).

Mix the dry ingredients together in one bowl. Then mix the other ingredients in another bowl until smooth (somehow I didn’t get a picture of this!).

Mix the dry and wet ingredients together and add the chocolate chips.

Scoop the batter into a mini muffin tin and bake at 350 degrees for about 12-15 minutes.

These are delicious straight out of the oven! Perfect for an after school snack.

Chocolate Peanut Butter Oatmeal Cups

Ingredients

  • 1 mashed banana
  • 2 large eggs
  • 1/3 cup peanut butter
  • 1 cup almond milk
  • 1 tablespoon coconut oil
  • 3 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup miniature chocolate chips

Directions

  1. Preheat the oven to 350 degrees.
  2. Add the dry ingredients to the bowl (oats, flour, baking powder, and cinnamon).
  3. Add the wet ingredients to another bowl and whisk until smooth.
  4. Stir in the mini chocolate chips.
  5. Spray a mini muffin tin with cooking spray and scoop about a tablespoon of batter into each cup.
  6. Bake for about 12-15 minutes until firm.
  7. Let cool on a baking sheet.

These chocolate peanut butter oatmeal cups are perfect for an after school snack or for heating up for a quick breakfast on the go!
