My husband and I went back on Keto a few weeks ago. Getting back into the swing of low carb meals we can get into a rut of a basic meat and broccoli or other green side. It gets old fast!
This week I needed flavor and some good old fashion comfort foods, so we broke our normal routine and went for all new recipes we’ve never tried. This can be a pricey game, don’t worry though I look specifically for recipes that fit what I had on hand. We also made a few alterations because really some recipe bloggers think you buy the strangest things…
Here are 5 new recipes we made this week, that got 5 stars from both of us (as well as the kids because I don’t make separate meals for anyone in this house).

Keto Beef Stew – The Low Carb Life
With Keto I feel like all the comfort foods are gone, but this Beef Stew recipe brought back all the good feels and amazing taste! We didn’t have turnips but we did have radishes (they are on sale this week at Publix). You may cringe at the idea, but both root veggies will soak up all the beef flavor and taste just like potatoes!! Every kid ate them happily with no coaxing needed.

Keto Chicken Divan – Joy Filled Eats
You really can’t go wrong with Chicken, Cheese and Broccoli. Chicken Divan is amazing and very easy to make keto friendly. This recipe is so easy one of my teenagers made it for us while all the rest stood outside hoping the rocket in Virginia would launch (anyone else spend a few nights hoping?).
I’m all for substitutions, but I will say if you don’t have the curry powder then wait until you get some. It really makes this wonderful.

Keto Enchilada Casserole – Healthy Recipes
Mexican food is my weakness and this Enchilada casserole was exactly what I needed. You probably have everything on hand already, so grab the chicken, cheese and spices and get started. We did leave out the cilantro (it’s not a favorite here), but didn’t alter anything else.
I keep shredded chicken cooked and ready in the freezer. While it’s not quite freezer cooking it does mean I can throw together meals like this in less than 5 minutes. You could also make two of these and stick the extra in the freezer all set to cook later.

Low Carb Stroganoff – Low Carb Maven
This is a great keto stroganoff recipe that calls for ground beef! I always use ground beef no matter the recipes call for, so here I didn’t feel guilty for being cheap. We made it completely by the recipe until we hit the brandy. I had red wine, so that went in instead. Seriously guys, it’s about staying on budget and there is something in the house that will work.
Serve this over cabbage noodles, cauliflower rice, or zucchini zoodles. They all work. Just remember to add in the carbs for those.

Gluten-Free Keto Chocolate Cupcakes – gnom-gnom
Since our week had a theme of comfort foods, what better way to top it off! These keto chocolate cupcakes are so good you’ll question whether they are low carb every time you eat one.
One big warning… keto baking will require unique things you may not have on hand. They are also pricey. If you want to start making treats it’s worth it to get the basics and then have them on hand for more recipes. I promise in the end making your own IS cheaper than buying pre-made low card goodies.
