As the weather starts getting cooler, I am counting down the days until I can host a bonfire get together and serve up some S’mores. I personally don’t even like them, but my gluten-free husband and all my friends love them. So in preparation for the Winter, my mission is to make a gluten-free S’more by finding a replacement for the Graham Cracker so my sweet husband doesn’t need to miss out.
After scouring the web for gluten-free graham cracker recipes and trying a few I realized that this was not the easiest option, plus none of the recipes were a good replacement. Graham flour is a about as whole wheat as you can get with the wheat bran and germ added in. It was created by a minister in the 1800’s who thought white flour would kill you (he may have been right). The sweetness and the coarseness is from that bran and germ and there really isn’t a replacement if you are going gluten-free.
If you are a baker I would encourage you to try your own blend with Tapioca and Coconut flour for the sweetness and then see if you can get a coarse ground brown rice flour for the texture. Yeah… it still won’t taste the same though.
In the end I am a simple girl and a cheap one. The cost of all these flours add up, and wasting them on recipes that don’t turn out well makes me ill. So here’s my solution… I promise it’s simple.
Rice Krispy Treats
Seriously, now you are merging two of the world’s best desserts together for my husband and he may not eat any dinner.
In case you forgot here’s how to make Rice Krispy Treats, plus a few products to grab to make these dairy free if you need that too.
Ingredients:
3 tablespoons of butter (for dairy free use – Earth’s Balance Butter Spread)
1 – 10 oz package of marshmallows
6 cups of Rice Krispies
Normally you would put this in a 9×13 pan, but for the sake of thin crackers use a cookie sheet (with sides). Use a piece of wax paper to press firmly as you flatten out the marshmallowy goodness, this makes a more stable cracker base. Allow your treats to cool completely before cutting.
If you are making dairy free s’mores there is one more thing you need to grab. You can’t use milk-chocolate so grab some dairy free chocolate bars. There are a few brands to pick from so we go with whatever your store has, Enjoy Life, So Delicious, Chocolate Dream (made by the makers of Rice Dream).
In the 10 minutes it took to make your rice krispies “cracker”, everyone else trying to bake a graham cracker replacement is still hunting for the flours at the health foods store.
